How to properly brew coffee beans in a Turk and a coffee machine and brew in a mug

Only true gourmets master the art and can tell you how to brew coffee beans. The quality of raw materials, production technology and methods of processing coffee seeds are of great importance in preparing the drink. The type of plant, proper roasting and grinding are important. To preserve the aroma and taste characteristics, special knowledge of brewing the drink is required. We understand the cooking methods, time frames and utensils suitable for the process.

The best varieties of your favorite drink

Common varieties are Arabica and Robusta. Arabica is tender and aromatic, the taste is affected by soil fertility and weather conditions. Strong robusta is not demanding on growing conditions.

The best coffee beans include:

  • Jardin - producers boldly experiment with the strength and proportions of different varieties of Arabica, the quality of bean processing remains high.
  • Lavazza is an Italian brand. The most delicate types of Arabica are used.
  • Paulig – complete harmony and impeccable aroma.
  • Gut! – a strictly selected Arabica with a strong taste and rich aroma.
  • Kimbo – mild taste. Keeps longer than other varieties.

Methods of roasting beans

Coffee beans can be of varying degrees of roasting. The final taste depends on how the grains were roasted. There are the following degrees of roasting of beans.

  • Strong. The cracks on the coffee beans are bright and deep, the grain has a dark brown color. Highly roasted beans make a very strong drink. High roast is the most popular and is used to release as much caffeine as possible from the bean. Beans roasted using this method produce a very tonic drink. Just be careful with this type of roasting. It often happens that unscrupulous producers hide the low quality of beans behind a high degree of roasting.
  • Average. This degree of roasting is made specifically for espresso. This roasting is ideal for releasing some of the oily resins from the grain.
  • Weak. Cracks in the grain are almost invisible, the color of the grain is light brown.
  • Initial. This degree of roasting is used for elite Arabica beans. The taste of the drink is revealed only slightly, the aroma is light and barely perceptible.

There are several intermediate degrees of roasting of coffee beans. Typically, the name of the roast depends on the area where this method of processing coffee beans is typical. For example, there are American, French and Mediterranean roasts.

It is worth paying attention: there is a separate type of coffee beans that are not roasted. The drink made from these beans is called “Green Coffee”. Recently, unroasted grains have become especially popular due to their tonic and fat-burning properties.

How to choose the right coffee beans

We need to experiment

Coffee lovers often joke that the search for the most suitable variety can take a lifetime. Even minor climate changes in the area where coffee trees grow affect the taste of the drink. And then the familiar variety receives new notes in taste and aroma.

Modern supermarkets offer a wide range from different manufacturers. It is important not to get lost in the abundance of goods and choose the right drink. Beginners will have to experiment to find the right taste and aroma. You can simplify the task by deciding which variety appeals to you in terms of smell, strength and other characteristics.

General selection rules

You need to buy coffee in specialized stores. Please note the release date. No more than a month should pass from the moment of packaging. When stored for a long time, roasted beans lose their aroma. Damaged packaging is not acceptable. Each one contains detailed information about the product.

The grains should be shiny in appearance. Tarnished or grayed ones were stored incorrectly; they will not make a tasty and aromatic drink. Ideally, they should be the same size: large Arabica beans (6-8 mm) and small Robusta beans (4-5).

Do not take more than one pack, maximum 200 g. Frequent opening and contact with air will spoil the taste and aroma of the drink.

Buy green grains only clean and whole. The scattering should be free of debris, sand and foreign odors. The aroma of high-quality grain is smooth, without any hint of mold. Do not buy a product that is under lights. Constant light and heat spoil the original taste and smell.

Why do you need to roast coffee?

Green coffee
Raw coffee beans are dense green seeds consisting of approximately half carbohydrates in various forms and half a mixture of water, proteins, lipids, acids and alkaloids. Green coffee tastes and smells most like peas and is just as hard in texture. It is not recommended to drink green coffee in its pure form, and those who say that you can lose weight with it are very mistaken; you can literally get “adventures on your ass”, but it is unlikely to lose weight. Therefore, green grain must be subjected to heat treatment in order to change the structure of the grain and its biochemistry during the roasting process.

Roasting Tips

Can hide flaws

When choosing, it is better to stick to Arabica. Robusta is characterized by sourness and a high caffeine content. Tasty and high-quality bean coffee cannot be sold at a low price . The degree of roasting plays an important role. It is divided into several types.

For home preparation, it is better to buy medium-roasted beans; the drink will be strong and aromatic.

By roasting too intensely, unscrupulous companies try to mask defects in the beans (mold, cracks, uneven structure).

Two simple home methods

True gourmets buy green coffee beans and roast them themselves. To do this, use two methods: in a frying pan or in the oven.

Take a frying pan with high sides and a thick bottom. It is washed cleanly, eliminating extraneous odors so that the coffee does not lose its taste and aroma. Pre-washed and dried grains are laid out in a thin layer on a heated frying pan and fried for 7 to 25 minutes, stirring with a wooden spatula. After frying, allow to cool on a tray.

For frying in the oven, it is heated to 230 degrees. The grains are placed on a special baking sheet with a large number of holes. Fry for 15-20 minutes. Stir and check the degree of readiness preferably every 2 minutes.

...in a frying pan

Probably every coffee gourmet dreamed of at least seeing the whole process of making coffee. We invite you to participate in it interactively by creating your own creative process. Believe me, it's nothing complicated. The prize is a cup of fragrant coffee almost entirely created with your own hands.

For frying, you will need a frying pan with a thick bottom, preferably steel or cast iron. Washed to perfect condition, without even a hint of foreign odors. Heat a frying pan slightly over low heat and add green coffee beans to it, about ¼ of the total volume of the container. With constant stirring with a wooden spatula, you need to gradually increase the temperature to “high heat”.

After about 5 minutes, the beans will begin to darken and turn honey brown to intense brown, emitting a distinctive coffee aroma. Roasting should last until drops of oil appear on the surface of the grain - as soon as you hear the first crack and see the first drops of oil, pour the beans into a previously prepared container. And immediately turn on the fan to cool the grains. You can get rid of the husks by pouring the grains into a colander and winnowing them.

How to grind coffee without a coffee grinder

After roasting, it is better to leave the grains uncovered in a flat container to cool. You can grind no earlier than after 10 hours. And this can be done even without a coffee grinder. Every housewife has more than one kitchen device that helps with grinding:

  • blender (put no more than 100 g of raw materials);
  • food processor;
  • meat grinder (only coarse grinding is obtained);
  • spice grinder.

Raw materials are successfully prepared for brewing even without the use of mechanical and electrical devices, as our ancestors did. At the same time, a tasty, aromatic drink was brewed from grains. Among the manual grinding methods we highlight:

  • mortar and pestle;
  • rolling pin;
  • chop hammer.

How they used to make coffee

Almost all the coffee that was made before tasted terrible and was almost undrinkable. Some people fried it at home in frying pans, which completely ruined the taste of this drink.

The owners of coffee plantations always boiled coffee beans in boiling water before selling them and then roasted them: this attitude also spoiled the taste of the drink.

True gourmets prepared the aromatic drink in almost the same way as we do now - they ground the grains by hand and boiled them over a fire.

Main types of grinding

It makes no difference how the coffee beans are ground, what matters is the particle size and consistency.

Fine and medium grinding are more suitable for cooking in a Turk. This is an oriental classic when, after emptying the cup, a lot of suspension remains at the bottom, which is used for fortune telling. To obtain such particles, it takes 15-20 seconds of operation of an electric coffee grinder.

To obtain a medium grind it takes 10-13 seconds of work, for a coarse grind it takes 7-10. Brew in coffee machines and coffee makers, since larger particles do not clog filters.

How about a cup of instant coffee?

Instant coffee contains no more than 15% coffee itself. The rest is flavoring additives, preservatives, dyes, oxidizing agents, etc. There is absolutely nothing healthy in this coffee, but rather the opposite. Instant coffee is often the cause of stomach ulcers, gastritis and cellulite. Instant coffee contains a very harmful substance – benzopyrene resin. This resin is an oxidizing agent and it has a strong effect on the body.

As for drinking natural coffee, in moderate quantities it does not harm, but benefits a healthy person. The only contraindication is high blood pressure. A harmless amount of coffee for the body is a cup or two a day.

Features of preparing the drink

Revealing the taste

To make coffee at home have an unforgettable aroma and excellent taste, follow a number of simple recommendations.

We look at the clock

The grinding option of the beans affects the brewing time of the drink. For thin, cook for no more than 3 minutes, for medium for up to 6 minutes, and for large for up to 8 minutes. Beginner coffee lovers need to use a watch to maintain the exact brewing time.

Do not bring the drink to a boil and remove it from the heat immediately after the foam rises, otherwise the taste will deteriorate. Additives are added to the finished drink to give it a more refined taste and aroma. Gourmets add: cream, milk, honey, chocolate, cinnamon, cardamom, nuts.

How coffee changes during roasting

Green and roasted coffee
As a result of roasting green coffee, many changes occur, both internal and external:

  • It changes color from green to yellow, then to yellow-brown, then to brown, and then completely black. It depends on how you fry it.
  • Almost doubles in size.
  • Its density, on the contrary, is halved, and the grain becomes more fragile.
  • It loses from 12 to 24% of its weight, depending on the initial moisture content and the degree of roasting.
  • Over 800 aromatic compounds are produced inside the coffee bean.

how to correctly say boiled or boiled coffee

Of course, the recommendations in the article are general, and each person is individual, but there are a lot of useful tips from a great specialist!)

https://lavkagazeta.com/dieta-dlya-leta-gramotnyy-detoks/

Massalsky Roman, doctor of Tibetan medicine and manual therapy. There are many diets, and most of them contain rational grain. However, if you stick to only one diet, you may not achieve your goals, because each person has their own body characteristics. And yet, there are products whose benefits or harm to the human body are undoubted. Here are some nutrition tips.

If you have a weak appetite or you can’t cheer up for a long time after sleep, then half an hour before meals it’s good to drink hot water , add a little ginger, it awakens digestion. Coffee. In principle, you can use it - preferably no more than once a day, if you do not have vegetative-vascular dystonia due to high blood pressure, stomach or intestinal cramps. Coffee has an unpleasant property: it dries out the myocardial heart muscle, essentially turning it into a tendon. If you do drink coffee, be sure to add cardamom, half a teaspoon per glass of ground coffee. When the Turks gave the Europeans coffee, they “forgot” to give cardamom. They themselves do not drink coffee without cardamom - it neutralizes the dehydrating effect of coffee on the heart muscle and blood vessels.

Another important note: many people like coffee with milk - cappuccino, ice, latte. However, coffee in combination with any milk leads to the formation of casein plugs, which damage the secretory cells of the stomach. It’s also better not to add sugar, at least brown sugar. Coffee is a separate food; it is harmful to take other food an hour before it and within an hour after it.

Sprouted millet porridge with cranberries is a good prevention against kidney disease. It's great to start your morning with, but you can also eat it in the evening.

Avocado. Another product to start your morning with. It contains both fats and proteins. Avocado does not go well with cheeses, cottage cheese, or any milk. But it goes well with sprouted soybean sprouts and legumes. Young sprouted legumes have an alkaline reaction. It's good to have more alkaline foods in your diet than acidic ones.

Another breakfast option: avocado and quinoa salad with tomatoes, basil, a little ginger and black pepper. It is better not to add soy sauce; the soy sauce that we sell is a preservative. It is better to season the salad with olive oil.

At about 12 noon you can eat cottage cheese with flaxseed oil . There is an excellent diet by Joanna Budwig, which is believed to help prevent cancer. In general, this diet is good for everyone, it perfectly strengthens the immune system. Every morning a person should eat farm cottage cheese, to which natural milk and cold-pressed flaxseed oil have been added at the rate of 5 grams per 100 grams of cottage cheese. You can mix, for example, in a blender, then add honey, muesli, nuts - any, except peanuts, they are not healthy. Our body reacts very well to this mixture.

Cottage cheese with tomatoes is an excellent combination, for some reason not very popular with us.

Very good Greek salad

, but if you put tomatoes in it, it’s better not to put cucumbers, and vice versa. At the same time, these vegetables are poorly digestible. In addition, cucumber contains substances that neutralize vitamin C in tomatoes. And do not forget, when adding olive oil, acidify it with lemon juice.

Beets and turnips are good to eat, not mixed with anything, but with spices. And raw beets, acidified with lemon or sorrel, are much better than those cooked for a long time.

mushrooms have already sprouted . It is better to cook each type of mushroom separately; this is an old Russian approach based on observations of the conditions of their natural growth. Mushrooms are good with cereals, as well as pumpkin and sweet peppers.

Strawberries and wild strawberries provide a lot of energy, and unless you have allergies, eat as much as you can handle. Cherries are not good for excess weight and swelling, but for thinness and too fast metabolism, they are useful.

Heavy food, which also provides a lot of energy, is best consumed during the day. Two or three hours after breakfast, eat the main dish - it can be meat or fish with a side dish, legumes. pork in our climate; it is a heavy product. Russian cabbage soup is made with lamb, and it’s not just like that. Lamb is very useful for those who spend a lot of calories. This meat should not be washed down with drinks colder than body temperature. After it, you should not eat cottage cheese, dairy, cold, or oranges for 2-3 hours. Brown rice goes well with lamb, but not so well with buckwheat . It is better to eat it as an independent dish, or with mushrooms. And one more nuance: it’s better not to eat store-bought buckwheat; only green buckwheat , the kind that can be sprouted.

In Russian fairy tales, the duck symbolized the feminine principle, and the man was associated with the goose or swan. Goose meat is very beneficial for men's health; women should avoid it if there are no problems with testosterone. Goose fat is great for problems with varicose veins. It also enhances libido, even if used only externally. Goose meat goes well with buckwheat. In Rus', buckwheat cake was given to newlyweds; it was believed that it enhanced the ability to conceive.

Even the best foods can be harmful if used incorrectly. I would not recommend making homemade mayonnaise, it is very greasy and heavy. It contains products that are best not combined with each other. An egg with sunflower oil is a bad choice. I’m not talking about store-bought mayonnaise at all, it’s pure poison. It is better to use cottage cheese with flaxseed oil instead of mayonnaise .

In general, any refined fats - margarine, non-cold-pressed vegetable oil - are harmful. Better buy good butter or ghee. Olive oil can be added to salads. But in general, it is good to eat in Greece; after all, the environment influences a person, and in our climate its positive properties are not so pronounced. True, olive oil has been known in Rus' for a long time - since the 11th century - under the name of wood, and in general we perceive it better than the inhabitants of northern Europe or the Finno-Ugric peoples.

Since the 11th century, spices - parsley, mustard, anise, coriander, bay leaf, black pepper, cloves, ginger. Thus, lean food (and more than half of the days a year are lean) was well absorbed. This was also helped by the method of cooking in a Russian oven - long simmering at 60 degrees. Now some stoves and multicookers allow you to imitate this effect.

, pickles and fermentations are excellent we have been eating them from time immemorial. In the East they will say that this is the wrong food, like canned food, and this is true for them. But for us, for Russians, sauerkraut is what we need. Just don’t combine it with potatoes or starchy vegetables in general.

Potato. Young potatoes have a lot of vitamin C, so it’s better to bake them. Juice from raw potatoes is also beneficial. But in the form in which we are used to eating them - boiled, crumbly - potatoes are not healthy at all. An excellent substitute for potatoes is Jerusalem artichoke. It takes two minutes to fry it. The main thing is not to combine it with fish, better with meat. Another very healthy product that can be used to replace potatoes is steamed turnips.

Menu for the evening: fish with vegetables or Jerusalem artichoke, just don’t take mackerel or halibut, they have a lot of fat. Rice is the best cereal to go with fish. The healthiest rice is brown. Meat is too heavy food for this time of day. You can eat two boiled eggs.

Eggs don't go well with anything at all. It is digested within 35-50 minutes, which is quite fast for such a product rich in fats and proteins. However, we spend a lot of energy on digesting it - for one egg, as for a kilogram of meat. The healthiest eggs are quail eggs, but chicken eggs are also good.

Tea. In Greece, for example, they drink tea only when they are sick. And it is right. Constantly drinking tea is not at all necessary; it is better to drink it only if you need to cheer yourself up. Instead, drink more water.

Warm milk with honey and nutmeg. If you drink this drink before bed, you will rest well and regain your strength. Moreover, it will help you lose weight, provided that the milk is natural.

How to make delicious coffee at home

You can brew coffee in different ways. There are many recipes and varieties of coffee beans. To choose the best option, you will have to experiment. Only then will it be possible to make the drink truly tasty. There are a number of general rules, following which you can get an ideal result.

Choosing a variety

To make the most delicious coffee, you need to pay attention not so much to the brand of coffee products, but to the country of cultivation and the method of processing the beans. It is noted that the best batches come from South, Central America and Brazil.

There are only two main varieties:

  • Arabica;
  • Robusta.

Arabica is characterized by a rich taste and aroma, but a relatively low concentration of caffeine. Those who like a strong drink will prefer Robusta. True, this variety is not distinguished by its exquisite taste, so it is included in mixtures. The strength of the coffee can be determined by the percentage of Arabica and Robusta. The higher the content of grains of the first type, the softer it will be.

Arabica and Robusta

Grain or ground

The drink is prepared from crushed grains. If you wish, you can buy ready-made coffee powder, but you will not be able to achieve excellent results. The ground product gradually loses its aroma, the taste becomes inexpressive. Therefore, it is better to prepare coffee beans yourself.

If the grains are roasted and ground immediately before brewing, the aroma and taste of the drink will be as rich as possible.

Roasting beans

When roasting, not only the color changes, but also the taste of the coffee fruit. Under-roasted grains are sour and their strength is low. If the heat treatment is too long, the drink will be too bitter.

For proper frying you need to do the following:

  1. Heat the frying pan.
  2. Grease the hot surface with butter.
  3. Fry the grains, stirring constantly.
  4. Remove the pan from the stove when the grains turn dark brown.

Immediately after this, the product can be ground and coffee prepared.

Do you need special utensils?

It is best to brew coffee in a special container or using a coffee maker or coffee machine. Coffee pots and Turks are made from the most suitable material and have a special shape.

You shouldn’t give up your favorite drink if you don’t have coffee utensils. As a last resort, cooking in any small container and even in a cup or thermos is allowed.

Is it possible to take water from the tap?

In order for brewed coffee to have excellent taste, you need to use water that meets the following requirements:

  • without smell;
  • colorless;
  • transparent;
  • does not contain chlorine.

Regular tap water will not work. It needs to be cleaned with a filter, but it is best to use bottled water.

Cooking in Turk

It is quite possible to prepare delicious coffee at home without a coffee maker or other modern equipment. You can use a regular cezve. The main thing is to choose the right cookware and strictly adhere to the instructions specified in the recipe.

Choosing a Turk

Making coffee in a Turk can be called a classic. The following materials are used to make the cezve:

  • copper;
  • brass;
  • aluminum;
  • stainless steel;
  • ceramics.

The volume of these dishes varies, but small Turks are especially popular. The best material is copper. This cezve heats up evenly, and due to its small size, the taste is fully revealed in it.

copper Turk

Aluminum containers heat up too quickly, which is extremely undesirable. Stainless steel cezves are also not the best option. They heat up unevenly. The highest temperature is observed in the center, and not high enough at the edges.

The disadvantage of ceramics is that it takes too long to cool down. When the dishes are removed from the stove, the foam continues to rise and there is a high chance that the liquid will spill on the table. In addition, such Turks are not suitable for induction cookers. They simply won't heat up.

Cooking in Turk

It's easy to brew coffee in a cezve. You need to do the following:

  1. Pour a teaspoon of coffee powder into a Turk and pour in 100 ml of water.
  2. Place the container on the stove.
  3. Add sugar (to taste) and a pinch of salt.
  4. Heat the liquid, but do not bring to a boil.
  5. When foam appears on the surface, remove the container from the stove.
  6. Place the dishes on the fire twice more and wait for the foam to rise.
