technique "
There are quite a few ways to brew coffee. Some border on super-scientific tasks and require serious technical equipment, for example, a modern multifunctional coffee machine, while others are considered classics and require nothing more than Turks and creative inspiration. Preparing an invigorating, aromatic drink in a pour-over is considered a low-tech method, but the results are very surprising.
How to brew coffee in a Turk?
The traditional Turkish drink is brewed in a special vessel, which helps preserve all the subtlest notes. How long to brew coffee depends on the surface on which you prepare it.
According to the classic recipe, ground grains are poured into the bottom of the dish and filled with cold, which is important, clean water. The Turka is placed on hot sand and there the liquid simmers for a long time until it boils. This is the unique recipe of the Turkish treat.
But at home there is no place to get that sand, so more often we cook on fire. Since water boils faster over a fire, all the aromas of the grains most likely will not be revealed. Therefore, you need to cook the delicacy over a fire with extreme caution; to do this, prepare:
- Ground grains – 3 tsp;
- Sugar - optional;
- Water – 200 ml.
How to make coffee:
- It is very important to finely grind the grains immediately before cooking. This way they won’t run out of steam, and fine grinding will give the necessary dense foam.
- Place the grains in a pot and fill with water to the level of the narrowest part.
- Place the dishes over low heat.
- Wait until the water begins to slowly boil, but this does not damage the layer of foam.
- Remove from heat, and after a minute bring to the boil again.
- Repeat the procedure a total of 4 times.
Turkish restaurateurs ideally know how to brew natural coffee; this option came to us from them. The fact that it is necessary to brew coffee in a Turkish coffee pot exactly 4 times is explained by the fact that this way the beans will fully reveal all their flavors. Brewed coffee is distinguished by its refined and persistent notes and amazing aftertaste.
How to brew coffee with milk?
The nobility of grains is perfectly revealed not only in water, but also in milk. Even those who do not add cream to the drink will not refuse such a treat. This delicacy is often called “Warsaw-style coffee.” Like the previous recipe, the milk delicacy can be made using different technologies. Let's look at the most popular:
- Turk with a large neck;
- Milk – 250 ml;
- Ground grains – 2 tsp;
- Cane sugar – 1 tsp;
- Cinnamon – a pinch.
Traditional preparation:
- Since milk has a habit of escaping, we choose the right turk, and calculate the volume of liquid to be only half of its volume.
- Yes, we put ground grains and sugar in the bottom, fill it with milk.
- Place on low heat and wait for it to boil.
- After boiling, add cinnamon.
- Place it on the stove again until a second milk cap appears. How long to brew coffee at a given moment depends on the degree of heat.
- Strain the finished drink and pour into cups.
The classic version of the milk treat is ready! The taste is significantly different from the usual recipe, so be sure to recommend this delicacy to your friends!
Types and varieties of coffee
There are more than 90 types of coffee, but almost 98% of the total production is occupied by 2 types: Arabica and Robusta. Arabica makes up 70% of this number. Its grains have an oblong shape and a smooth surface; before grinding, they are lightly fried to obtain the right taste and aroma. Robusta is considered a less refined variety, but the plant grows faster and is more resistant to pests. Its beans contain more caffeine, so it is used in espresso mixtures to reduce the cost of raw materials and produce higher quality foam.
Today there are many ways to make coffee. Everyone can choose for themselves what they like best: some people like coffee with milk or cream, some want a softer drink, some want to sweeten it with natural ingredients. Here we have collected 24 of the most popular coffee drinks.

Quick coffee with milk
This treat is less interesting in terms of its taste, since it cooks quickly, but there is no need to monitor the milk. To prepare it, pour milk into a special container and boil it. Then add ground grains, spices and sugar, put on fire again. When a thick head rises, remove the Turk from the stove and tap the bottom on any surface so that the thick layer settles. Then pour into cups - this will be a great addition to breakfast, especially if it is prepared in a hurry and there is no time for delights.
Over Coffee - a new social network for coffee lovers
A website has opened where coffee lovers from all over the world can express themselves, communicate with each other and find new cafes.

A new social network has been created to unite people from all over the world through their shared love of coffee.
Over Coffee bills itself as “a site about coffee, people, travel and the experiences people share over a cup of coffee.”
Users can create their own profile pages by registering on the site or logging in through Facebook accounts.
They can upload photos, chat about coffee, or use the interactive map to find coffee shops nearby or add information about their favorite cafes.
The site also has an online store where you can buy coffee beans, mugs, coffee machines and other products.
Social networks based on interests are a growing trend. Over the past few months, a social platform for Lego fans and websites dedicated to music festivals have already appeared. The desire to create massive, highly specialized communities has been gradually simmering from within for several years and has finally spilled out.
Just the other day, Meebo co-founder and CEO Seth Sternberg told Adweek:
Investors ask: “What other communities of people are there?” LinkedIn owns a network of professionals. Facebook owns the network of friends. No one expects a new successful entrepreneur to displace the industry leaders; on the contrary, market analysts are looking for niches beyond the “professionals” and “friends.”
Over Coffee may well turn out to be a successful project, since drinking coffee together is already a popular type of social activity, which means, in a sense, the service only offers an online platform for a social network that already exists offline.
The demand is already there: Philip Wilkinson, co-founder of luxury group buying service Keynoir, having sold his startup to Time Out, recently launched Kopi, a service that allows you to sign up for monthly special offers for tasting new varieties of gourmet coffee - and this is just one of many similar sites emerging all over the world.
In the Coffee Stories section, users can write about their impressions and tell interesting stories related to coffee, and the best posts become “featured”, ending up in the Featured Stories section.
In addition, on the social network, users can meet and meet new people to chat over a cup of coffee.
The service also has ample opportunities for monetization - in addition to the e-commerce platform, the interactive map can be used to sell geolocation advertising.
Interestingly, Over Coffee is also planning to open brick-and-mortar coffee shops to take the conversation beyond the online environment. This will definitely be the first time that a cafe has built a global customer base before selling its first cup of coffee.

How to brew strong coffee?
All invigorating treats differ in one way or another in their strength. How to calculate the required measure? You need to know how many spoons of grains to use for a certain volume of water. All drinks can be divided into three categories:
- Weak – the coffee content is very small,
- Medium - those that are usually sold in all restaurants,
- Strong drinks are special drinks that help improve tone in the body.
Strong delicacies have their own names: the most famous throughout the world are espresso and ristretto.
The latter is distinguished by a very small volume of liquid (about 25 g) and a large volume of ground grains (about 7-13 g). Ristretto is very loved by the temperamental residents of Brazil and the Apennine Peninsula. It translates as “compressed, saturated.” For its preparation, only heavily roasted grains are used.
It is better to prepare this drink in a coffee machine, since it pours not only boiling water over the grains, but also steam. If you try to do something similar at home, the result will most likely be bad. Italians prefer to serve this delicacy with cold water to remove the taste sensations from previous dishes, and drink the drink after dinner. This prevents you from falling asleep and gives you the vigor necessary to digest food.
Useful properties of the drink
White coffee is similar in its beneficial properties to green coffee. It contains a wide variety of vitamins, sterols, and fatty acids. Light heat treatment allows not only to preserve the maximum beneficial qualities of the product, but also to increase its shelf life. It is worth considering that white coffee will have a beneficial effect on the body only if consumed in moderation.
The beneficial properties of the drink are as follows:
- improves the functioning of the gastrointestinal tract;
- helps neutralize the effects of alcohol;
- stimulates bile production;
- cleanses blood vessels due to the breakdown of fats;
- improves metabolism;
- improves blood circulation.
In addition, white coffee, prepared using natural ingredients, promotes the breakdown of fat deposits due to the content of chlorogenic acid.
Vitamin P, which is part of it, has a beneficial effect on the circulatory system.
Drinking a freshly brewed drink helps neutralize the effect of alcohol on the body.

Coffee “Sleepless” is ready! This treat is best served on the table with kozinaki, sweet dried fruits or dark chocolate.
Brewing coffee
Few people know, but you can brew coffee in the same way as tea. This unusual method came to us from tropical countries. Boiled coffee is fundamentally different from what can be brewed in a French press. For this you will need:
- Water – 300 ml;
- Ground grains – 3-4 tsp;
- Sugar – 2 tsp.
Cooking method:
- The grains for this kind of preparation must be coarsely ground. Take care of this before brewing.
- Boil the kettle and let it sit for a while (you need a temperature of 90-95 degrees).
- Pour the ground grains into a clean, dry French press, fill them with half the water, stir and let stand. It is important that all the grains are under water.
- Set the kettle aside for 1 minute.
- After the time has elapsed, carefully add the rest of the water so as not to damage the formed foam.
- We time it for another 3 minutes.
- After this time, lower the press to the bottom and pour the drink into cups.
- We enjoy the unique taste of the created treat.
This cooking option has now become very popular. Even in simple coffee shops in the capital you can find coffee brewed in this way.
History of the pour over
Despite the English name, this method of preparing delicious and aromatic coffee appeared in Japan. So, more than a century ago, in 1908, they began to pour very hot water into finely ground coffee, poured into a paper filter. In search of the optimal result, a certain sequence of actions was developed - a real coffee ceremony. The name itself reflects the basic principle of obtaining the drink - pour water on top (pour over). For a long time, Europeans and Americans did not give pour-overs their due. It gained wide popularity relatively recently - after 2010, and is now widely used both in coffee shops and at home. In many ways it is similar to Chemex, but has a number of differences.
