It is not known who and when first came up with the idea of pouring a portion of strong coffee over a scoop of ice cream, but the Italians gave the dessert its name. “Affogato” translates as “drowned” and accurately reflects the technology of preparing the dessert. Under this name, the delicacy quickly spread throughout the confectionery shops and coffee shops of Europe.
What do you need to know to make a good affogato?
- The taste background is set not by coffee, but by ice cream, so for dessert you will need a good ice cream. You can take a scoop of vanilla or chocolate ice cream. But berry or fruit flavors, as they say, are not everyone’s cup of tea.
- The quality of coffee in dessert is not that important. In cafes and bars, a serving of regular espresso is added to dessert. At home, you can make coffee in a Turk, French press, or brew it in a regular cup. Before using, a hand-made drink must be strained.
- Coffee in affogato requires only two things - it must be strong and hot.
- Some dessert fans do not like too sharp contrasts in taste and add a little sugar to their coffee.
- To decorate affogato, various toppings, chocolate chips, chopped nuts and other types of toppings are used.
- Affogato can be prepared in an “adult” version by adding a little cream liqueur, cognac or amaretto.
How to make coffee affogato?
This dessert, having gained wide popularity, has changed beyond recognition: how and with what it is served!
To make a good affogato coffee, it is important to know the following:
- The taste of the finished treat will depend on the quality of the ice cream, and to a lesser extent on the quality of the coffee. It is the ice cream in this duet that is the main batch, so you shouldn’t skimp on it.
- The flavor of the coffee will be muted by the sweetness of the ice cream, but it is important that it is strong and hot.
On a note! Some people don't like too much contrast between bitterness and sweetness and deviate from the traditional recipe by adding a little sugar to their coffee.
Next, we will tell you how to properly prepare affogato coffee according to the classic Italian recipe.
To do this you will need the following ingredients:
- Vanilla ice cream - 100 grams.
- Espresso - half a teaspoon of coffee per 50 milligrams of water.
- Liqueur - 2 teaspoons.
- Additives for decoration - grated chocolate, nut crumbs, etc.
The dessert is prepared in several stages:
- First, you need to take the ice cream out of the refrigerator - by the time you mix it with coffee, it should melt slightly.
- While the ice cream is melting, the espresso is brewed - you can use either a carob coffee machine, a French press, or an ordinary Turk. The main thing is that the drink should be very strong. When brewing in a Turk, you can bring it to a boil 2-3 times so that the ground grains fully reveal their taste. Hand-brewed coffee must be strained.
- While the espresso is being prepared, you need to form balls from the melted ice cream - for this you use a special spoon, but you can get by with an ordinary table spoon. The balls are placed in a dessert bowl, a ceramic bowl with thick walls, or an ordinary cappuccino cup.
- The ice cream is topped with liqueur and then topped with espresso.
- Before serving, the dessert is decorated with nuts, chocolate chips, cinnamon or anything else to taste.

How is affogato different from glace?
There is an opinion that affogato is the same as the popular iced coffee, it’s just a different name - not French, but Italian. However, it is not. The differences include the following:
- Glace is considered a coffee drink, while affogato is a coffee-based dessert.
- When preparing affogato, hot coffee is used, and the contrast in temperature acts as the highlight of the dessert, while for glaze, the coffee is cooled.
- When served, affogato looks like a ball of ice cream “drowned” in coffee, while glace is a more homogeneous mixture of ingredients, reminiscent of a slurry.
- Traditionally, affogato is made with just one or two shots of espresso, so there is much less coffee in this dessert than in glace.
Homemade affogato recipe
Affogato is easy to prepare at home, and this dessert looks festive and elegant. Therefore, it can be included in the menu of a family holiday, romantic evening or friendly gatherings.

- Coffee prepared at the rate of 1 teaspoon of ground coffee per 80-100 ml of water - 50 ml.
- Syrup or topping - 2 teaspoons.
- For decoration - grated chocolate, almond petals, nut crumbs, cocoa mixed with powdered sugar, etc.
How to cook?
- Brew or brew coffee and strain it.

How to serve affogato?
Thick-walled ceramic bowls are best suited for serving. They are used for portioned desserts, as well as for baking.
Ceramic or glass ice cream bowls will work, but they should have thick enough walls to maintain the tangy temperature difference between cold ice cream and hot coffee longer.
As an alternative, you can use regular cups, for example cappuccino cups.
Spoons are served with dessert.
Choosing ingredients for affogato
In cafes, ice cream is poured with a single (shot) or double shot of espresso. Double espresso is required only in Macaffogato. At home, any strong black coffee prepared in an electric geyser coffee maker, pour over or French press will do. The main thing is that not a single grain of grounds gets into the liquid. It is recommended to additionally filter a drink brewed in a Turk or French press.
Ice cream and various toppings hide the subtle nuances of taste, so there is no need to brew coffee from expensive single-origin coffees. Affogato based on 100% Arabica coffee has a more delicate taste. But those who value strength and are not afraid of bitterness can safely choose mixtures with a high (up to 50%) robusta content.
The degree of grinding depends on the cooking method. But it is not recommended to grind the beans into dust even when brewing coffee in a Turkish coffee pot: then it will be very difficult to filter out the suspension of the smallest particles of the grounds. The preferred degree of roasting is medium (City, Vienna). If roasted lightly, the dessert will lose its characteristic coffee taste. The taste of a drink made from beans that are too darkly roasted does not go well with the taste of ice cream.
Coffee should be brewed with bottled water with mineralization in the range of 75–250 mg/l.
Ice cream for affogato
The most delicious affogato coffee is made with ice cream. In the classic version, vanilla ice cream is used, but coconut, chocolate, coffee, or creme brulee are also suitable. For those who are planning to eat affogato, there is no point in counting calories: the ice cream is not much calorie-rich than regular ice cream, so healthy minded people will most likely have to give up dinner or replace it with something light.
Methods for preparing affogato
Before making affogato, you need to cool the glass or bowl to serve the dessert. There are two ways to pour coffee into ice cream:
- Place a scoop of ice cream in a glass and pour coffee on top. With this method of preparation, ice cream can be either hard or soft (although soft is preferable). Serving utensils must be made of heat-resistant material;
- Carefully make a depression in the ice cream ball lying at the bottom of the glass (similar to the mouth of a volcano). Pour coffee into it in a thin stream. About a third of the liquid will not fit in the recess and will splash out, flowing down the outer surface of the ice cream to the bottom of the glass. The result is an interesting and effective combination: at the bottom there is a thick coffee-creamy sauce, then there is soft ice cream, and inside it there is practically iced coffee. With this method of preparation, the dishes do not have to be heat-resistant: only a small part of the coffee gets to the bottom of the glass, and thanks to contact with the ice cream, the liquid has time to cool.
