At the dawn of aviation progress in the 30s of the last century, people traveled the route between Europe and America passing through the Atlantic Ocean on seaplanes. This type of transport was not sufficiently suitable for transporting people; it was not sealed and was not heated, so passengers were subjected to severe cooling during the many-hour journey.

Along the intercontinental flight route in Ireland, there was a port in the city of Foynes that acted as an intermediate point for airlines. It was possible to wait out bad weather in it, refuel the seaplane, and passengers could warm up and refresh their strength in a local restaurant, whose chef was Joe Sheridan.

In the winter of 1942, people flying from Foynes to Newfoundland urgently returned to port due to dangerous weather conditions. Exhausted and cold travelers needed to be warmed quickly and effectively. In this situation, the unconfused Joe decided to treat the suddenly appeared visitors to both a hot and invigorating drink. To do this, he added Irish whiskey to the coffee, and topped it with an even layer of lightly whipped nutritious cream. Passengers responded to this cocktail with only positive responses, and one of them asked the question: “Is this Brazilian coffee?”, to which Sheridan replied: “No, Irish!”
