The topic of marshmallows is truly inexhaustible, today I am sharing a recipe for coffee marshmallows. This dessert will definitely appeal to coffee lovers; it’s no more difficult to prepare than classic marshmallows, so let’s get started!

What is the name of marshmallows in coffee?

These small pieces of foam that are placed in a cup are properly called Marshmallow. They are often called marshmallows or marshmallows (because they are small) due to the similar delicate texture, but they are a completely different confection that is more similar to a marshmallow or soufflé.

The composition of marshmallows differs from the marshmallows we are used to: it is made from corn or sugar syrup, gelatin and some additives, and the classic marshmallow is based on egg whites and fruit puree. The similarity lies in the outer velvety coating and some “rubbery” feel. You can also put regular marshmallows in coffee, preferably slightly mashed with a fork, but marshmallow marshmallows look more interesting and beautiful.

Combine applesauce with sugar and place on fire.

If we are preparing berry marshmallows, we boil it down heavily, but since we are preparing applesauce from baked apples, all the liquid has already gone, we only need to dissolve the sugar.

Bring the puree to a boil and simmer for several minutes. The sugar should completely dissolve and the mixture will thicken, with large bubbles appearing on the surface.

Pour the boiled puree with sugar into a bowl where you will beat the marshmallow mass.

Add instant coffee to the hot puree and stir until smooth. Set the puree aside to cool to room temperature.

Cool the puree at room temperature slightly.

The marshmallow mass should be thick, similar to marmalade.

Add egg white to the cooled puree and beat with a mixer, gradually increasing the speed.

It will take 5-7 minutes to beat the homemade marshmallow puree to the desired consistency. The mass should become lighter and very stable, hold its shape well and not fall off the whisk.

Cook syrup for marshmallows.

Theoretically, you can start cooking the syrup and whipping the marshmallow mass at the same time, but if you feel unsure, then do the processes one after the other.

Pour water into a saucepan, add agar-agar, sugar and place over medium heat. Bring the syrup to a boil.

Agar-agar will begin to activate, and due to this, the mass will increase in quantity and foam, this is normal. After the syrup has boiled, it must be actively stirred with a spatula, thereby preventing the agar-agar from sticking to the bottom, but interacting evenly.

In order to bring the marshmallow syrup to the desired stage, you need to keep it on the fire for another 4-6 minutes after boiling. If you push the syrup off the spatula and it falls off in a thick, thick string, the syrup is ready. You can see this state in this video.

Immediately pour the finished hot syrup into the marshmallow mass in a small stream, whisking everything with a mixer at high speed.

Continue beating the mixture for another 5 minutes.

The marshmallow mass should hold its shape well, be fluffy and shiny.

Let the marshmallows dry at room temperature for 10-12 hours.

Separate the halves from the parchment.

Properly prepared marshmallows will easily come away from the parchment, leaving slightly visible circles. If large pieces of marshmallow remain, this means that the marshmallow contains a lot of moisture.

Glue the marshmallow halves together and roll in powdered sugar. Shake the powder well.

Store marshmallows in a closed container for several weeks.

How to drink coffee with marshmallows

In general, technique is not the main thing, what is important is to enjoy this unusual drink. There are no uniform rules. For example, you can do it like this:

  • Turn the marshmallows over one at a time, waiting for them to completely turn into sweet foam. Drink carefully so that the coffee and marshmallow flavors and textures mix in your mouth.
  • Shake the whole mixture. An option for impatient sweet lovers. Beat everything with a spoon, the texture of the drink will be more homogeneous.
  • Wait until the marshmallows melt on their own.
  • Through a thick tube. Let the marshmallows melt while you enjoy the more coffee flavor. In this case, it is necessary that there is no grounds at the bottom.
  • The shake with whipped cream and marshmallows can be eaten with a spoon from a cup.

Coffee marshmallows - a recipe that always works

Coffee dessert is an exquisite delicacy, very popular among eaters of all age groups. Making it is easier than it seems, read the recipe.

Ingredients:

  • Antonovka – 4 pcs.
  • Water – 150 ml.
  • Protein.
  • Sugar – 400 for syrup, 250 for apple puree.
  • Vanillin - a sachet.
  • Agar-agar – 4 small spoons.
  • Instant coffee – 3 small spoons.

Preparation:

  1. Bake halved apples in the microwave or oven. If you did not immediately remove the seeds and peel, then wipe in a sieve.
  2. Beat hot apples with a mixer, take 250 g. puree, add vanillin and sugar (see recipe for quantities). Cool the puree.
  3. At the same time, soak the pectin in cold water. After 10 minutes, let it cook. When signs of boiling appear, add sugar. Cook while constantly stirring until the syrup thickens. A “glass” thread that will continuously drip from the spoon will tell you when it’s ready. Leave the syrup to cool.
  4. Add apple puree, add egg whites, beat at high speed. The mass should become fluffy and hold well without settling.
  5. Without stopping, slowly pour in the syrup. The longer you beat, the denser the mixture will become.
  6. Dissolve coffee in 2 small spoons of boiled hot water. Pour into the mixture without stopping the mixer.
  7. Use a piping bag to form marshmallow halves. Dry for several hours. Then glue the halves together and powder them to prevent them from sticking together.

Calorie content of coffee with marshmallows

It seems that the marshmallows weigh almost nothing, and you only add a small amount of them, but this impression is deceptive. This is a fairly high-calorie product, as it is made from starch, sugar or syrup, and contains other additives. And the more mashmallows you put in your drink, the higher the calorie content it becomes. Milk, chocolate, cream and sugar further increase the energy value of the drink.

On average, the calorie content of marshmallow marshmallow is about 330 kcal per 100 grams. Place about 30–50 grams in a cup, depending on how dense the foam you want to get. That is, a cup of black coffee with marshmallows added to it contains from 100 to 160 kcal (this is without sugar and milk!), and maybe up to 450 kcal if you add additional ingredients, fillers, syrups, etc.

Marshmallows with banana - a simple homemade recipe

You will need:

  • Bananas – 250 gr.
  • Water – 75 ml.
  • Protein.
  • Pectin (agar-agar) – 5 g.
  • Sugar – 350 gr.

Preparation:

  1. Soak agar-agar in cold water, stir, set aside.
  2. Remove the peel from the bananas and cut the pulp into rings. Add sugar and use a masher to puree (or use a blender).
  3. Place over moderate heat and cook for 3-4 minutes after signs of boiling.
  4. If you haven’t blended it before, grind it or rub the brew through a sieve.
  5. Cool the puree in the refrigerator, then cut into slices.

The cost of marshmallows and where to buy

Marshmallow marshmallows can be purchased in most supermarkets, in the candy section. Not the most popular product, so it is sometimes hidden on the lower shelves. In large hypermarkets they are available in 95% of cases, in small shops - not always. Can also be found in the sweets departments of markets.

The price of mashmallows in stores is usually low, so you can always buy a small package just to try a new taste:

  • A 120 gram package costs about 80–100 rubles.
  • 200 grams – approximately 150 rubles.
  • By weight - 110–130 rubles per 100 g.

On average, a 100-gram pack is enough for 2-3 large servings; for children, it can be enough for 5 cups. It all depends on how sweet the drink you want.

Chocolate marshmallows - a simpler recipe

A somewhat complicated recipe, but so much fun! It cannot be classified as a dietary option, but sometimes you want to sin.

You will need:

  • Applesauce (ready) – 200 gr.
  • Cocoa powder – 40 gr.
  • A bar of dark chocolate.
  • Gelatin - 10 gr.
  • Sugar – 150 gr.
  • Honey – 100 gr.

How to cook:

  1. Make applesauce according to the first recipe, the whole process is described step by step.
  2. At the same time, let the gelatin swell. When the crystals have absorbed all the water, turn on the gas and add sugar. Heat until the sweetness dissolves.
  3. Melt the chocolate in a water bath.
  4. Combine syrup, melted chocolate in a container, add honey. Mash the mixture thoroughly, then beat with a mixer.
  5. Transfer the mixture into the mold. Be patient for 1-2 hours.
  6. Cut into portions and roll in cocoa powder.

Let's sum it up

  1. Coffee with marshmallows is a dessert drink; it turns out sweet, with a thick, fluffy foam.
  2. It is better to use special marshmallows, they melt better and form foam faster.
  3. Marshmallows melt only in a hot environment; you won’t be able to make iced coffee with mashmallows.
  4. The easiest way to prepare it is to pour marshmallows into a cup of Americano or Turkish coffee and let it melt.
  5. The sweetened drink is quite high in calories, which may be important for those watching their figure.

Dietary curd marshmallows with currants

The dessert, which is incredibly easy to prepare, always turns out very tender and airy.

Take:

  • Cottage cheese – 400 gr.
  • Black currant – 50 gr.
  • Milk – 120 ml.
  • Gelatin – 15 gr.
  • Powdered sugar – 50 gr.

How to do:

  1. Soak gelatin crystals in milk.
  2. Pour boiling water over fresh or frozen currants and turn them into a paste using a sieve.
  3. Place the cottage cheese in a bowl, beat it with a blender, then it will become airy. Add berry puree.
  4. Stir the mass. Add powder and dissolved gelatin.
  5. Stir, or better yet, beat (with a mixer), place on the refrigerator shelf for 10 minutes to cool.
  6. Fill a piping bag and use it to make marshmallows. Return to the cold for another hour or two.
