You can't do without coffee in the morning. It finally awakens us, it makes it easier to get through the day at university or at work. But now we are already at that age when, instead of wine from a bag, we buy good wine in normal bottles and are ready to pay more for quality beer. That is, the time has come to reconsider our attitude towards coffee.
We talked to Louise Reiche: she knows what good coffee is. Louise has been working at Café Kodos in Hamburg since September 2020 and has recently been managing two café branches in the Hamburg districts of Ottensen and Sterschanze. As an experienced barista, she conducts internal training for cafe employees. Louise gave us some professional tips and told us how to make good coffee in your own kitchen.
Filter coffee or espresso?
Coffee is different, that's understandable. But espresso and filter coffee differ not only in taste and appearance - the differences begin at the bean stage. “Of course, there are no species of trees on which espresso coffee grows separately, but the beans are fundamentally different,” explains Louise. For espresso, the coffee beans are roasted more intensely than for filter coffee because the longer the beans are roasted, the less acid they retain. In addition to coffee beans of one type, mixtures of different varieties, so-called blends, are often prepared for espresso.
“Filter coffee or espresso? You have to make a decision from the very beginning,” says Louise. The type of coffee determines what equipment you will need at home. For those who want to brew espresso, it is best to invest in a good carob coffee machine. Louise cannot recommend a classic geyser espresso coffee maker like the Bialetti: “In such coffee makers, the water must really boil. And boiling water dissolves bitterness and acids in coffee, and the taste becomes appropriate. If the coffee tastes very bitter when you drink it, something was done wrong.”

Back to basics
For anyone who wants to make simple, tasty and high-quality filtered coffee at home, Louise recommends using a classic brewing filter, which is placed directly on a cup or coffee pot. Ground coffee is poured onto a paper filter and then hot water is poured in a thin stream. “But if you need to brew a lot of coffee at once, for example, for guests, then it’s better to use a classic French press,” says Louise.
Paper filters also vary. Classic paper filters, which were used in older generation coffee machines, do not have a triangular shape, but a shape truncated at the bottom. Louise explains: “This shape of the filter does not allow the water to flow through the coffee smoothly, causing it to remain in contact with the hot water for too long. And it dissolves bitter substances in coffee. Therefore, paper filters should have a pointed end - this will make it easier for water to flow through the coffee.”
Don't waste money on coffee!
Coffee is sold everywhere: supermarkets, organic food stores or discounters. Their range includes both bean and ground coffee, cheap and expensive, in packs from 250 grams and in 1.5 kg family packs. There are packs with the signs Bio (“bio”) and Fairtrade (“fair trade”). This is what a typical coffee shelf looks like in a store.
“Unfortunately, industrial coffee labels are often confusing. Bio and Fairtrade labels also cannot be blindly trusted: they are awarded on the basis of very vague requirements for growing and selling coffee. They say nothing about the quality and taste of the product. In general, we can say: no one benefits from a pack for three euros - neither the consumer nor the local coffee producers,” says Louise.
Where does coffee come from?
In addition to the method of preparing and roasting the beans, geographic factors can also affect the taste of coffee. What is the soil composition? What minerals do they contain? At what altitude is coffee grown? “There are flavor profiles associated with certain continents or growing areas. For example, in Africa, grains have light fruity notes. Coffee from Asia has a chocolate-nutty taste,” says Louise.

“Espresso requires a finer grind because it means there will be shorter contact with the water than with filter coffee,” adds Louise.
And finally: remove the coffee from the refrigerator!
Louise considers this extremely important: “The rumor that it is better to store coffee in the refrigerator is very tenacious, but coffee has no place in the refrigerator!”
The fact is that coffee beans absorb moisture and odors, and this kills the taste of coffee. Store coffee in a dry place, at room temperature and in airtight containers. This way the grains can be stored for up to six months. But ground coffee should be consumed within four to six weeks.

- Divide the ground coffee in half.
